Egg-less Nog Truffles Millet Balls

Egg-less Nog - Delightfully healthy

1 package extra-firm silken or soft tofu
4 litres soymilk – vanilla or plain (we like to use Silk Soymilk)
2 tsp vanilla extract (add a little bit extra if using plain soymilk)
¼ Cup maple syrup
¼ tsp turmeric
½ tsp nutmeg
1 tsp cinnamon

Blend all ingredients thoroughly with hand blender or in batches in the blender. Taste and adjust seasonings, then serve over ice with a sprinkling of nutmeg on top. Deeeeeeee-licious!

Truffle-icious - Divinely decadent

These truffles are a fabulous non-dairy delicacy for the holiday season. This recipe will make about a dozen truffles. They are very rich, so indulge sparingly.

4 oz good quality, non-dairy organic dark chocolate
¼ cup soymilk
3 tbsp extra-virgin olive oil

Optional flavourings:

1 tsp almond extract
1 tsp vanilla extract
1 tsp orange extract
1 tsp peppermint extract
½ cup ground almonds or coconut

Gently heat the chocolate, soymilk, olive oil, and choice of flavouring together in heavy bottomed pan or double boiler, stirring constantly until the chocolate is completely melted and all ingredients are well blended. Refrigerate the mixture overnight in sealed container. Roll 1 tbsp of truffle mixture into ball and then roll in ground almonds or coconut. Store in sealed container in freezer until ready to serve.

Millet balls - Wonderfully sweet!

½ Cup nut butter (try organic peanut butter, almond butter or cashew butter)
½ Cup honey or brown rice syrup
¼ Cup Soymilk powder or milk powder
1 tsp vanilla
2 cups puffed cereal such as millet or rice

Mix nut butter, honey or rice syrup, soymilk or milk powder and vanilla together in a mixing bowl. Add puffed cereal and mix gently until thoroughly coated. Form into small balls and refrigerate until serving. To keep your fingers from getting too terribly sticky (a little bit is inevitable), try flouring them with rice or millet flour.
