Traditional Irish Stew
This is one of Ireland’s most famous dishes.

2 – 3 pounds of boneless lamb, cut into 1-inch pieces
1 ½ tsp fresh chopped parsley
1 tsp dried or fresh thyme
6 cups chicken or lamb stock
2 – 3 pounds potatoes, peeled & quartered
1 - 2 large onions, chopped
2 cups of chopped carrots
6 stalks of celery, chopped
6 Tbsp of flour
¼ cup vegetable oil
salt & pepper

Heat the oil in a dutch oven. Add the lamb, parsley, thyme, salt and pepper. When meat in nicely browned add the potatoes, onions, carrots, celery and the broth. Simmer covered for 2 hours.

In a small bowl whisk together flour and some of the broth from the stew until smooth. Stir into the simmering stew until the stew has thickened, then continue simmering for an additional 4 – 5 mins.

Yield: 8 to 10 servings

Untraditional Vegetarian Irish Stew
We adjusted the traditional Irish Stew and came up with a wonderful vegetarian version.

1 package of extra firm Silken Tofu
approximately 4 Tbsp Tamari Sauce
3 tsp. chopped parsley
1 tsp dried thyme
4 - 5 cups organic vegetable broth
1 ½ cups of peeled and chopped potatoes
1 large onions, chopped
1 ½ cups of chopped carrots
3 stalks of celery, chopped
Vegetarian gravy
salt & pepper

Marinate the tofu in Tamari Sauce and Olive Oil for several hours or overnight. Heat vegetable oil in dutch oven, add drained tofu (reserve the liquid). Brown the tofu, adding the drained liquid a little at a time until all used up. Remove the tofu from the pan and add all vegetables and cook for about 5 – 6 mins, stirring frequently. If vegetables start to stick to bottom of pan, add a little of the vegetable broth. Transfer tofu back to pan, add vegetable broth, herbs, salt & pepper and the vegetarian gravy. Put into 350° oven for approximately 1 ½ hours.

Vegetarian Gravy. Can use a package mix or heat vegetable broth in small pan, add 1 – 2 Tbsp cornstarch to thicken, add water, or water that potatoes or other vegetable have been cooked in. Cook, stirring constantly until thickened.

Fish & Chips

Traditional Battered Fish
1 ½ quarts canola oil
4 cups flour
1 ½ tsp salt, ¾ tsp pepper
1 ½ tsp garlic powder
2 tsp onion powder
2 tsp baking powder
1/8 tsp cayenne pepper
1 ½ pints Guinness beer
2 to 3 pounds fresh cod or halibut fillets

Vegan Fish
¾ pound of firm tofu, cut into 4 slices (½ inch thick)
1 cup of bread or cracker crumbs
1 Tbsp nutritional yeast
½ tsp garlic powder
½ tsp onion powder
1/8 tsp cayenne pepper
1 tsp powdered kelp
olive oil
Place tofu slices on a clean kitchen towel and tightly wrap the towel around the tofu slices to get out as much of the water out of the tofu as possible, let sit for about ½ hour. Combine crumbs, yeast, garlic powder, onion powder, cayenne pepper and kelp. Mix together. Brush tofu with olive oil. Dip each slice into the breading mixture, place on oiled baking sheet and bake for 20 mins in a preheated 350°oven. Serve with tartar sauce.

Baked Chips (A Healthier Alternative)

4 large baking potatoes, well-scrubbed
4 tablespoons good olive oil
1 1/2 teaspoons sea salt
3/4 teaspoon freshly ground black pepper
1 teaspoon minced fresh garlic

Preheat oven to 400 degrees.

Cut the potatoes in lengthwise strips to desired width. Mix olive oil, salt, pepper, garlic, and herbs in a wide bowl. Add the cut up potatoes and stir to coat. Place the coated potatoes on a baking sheet in a single layer.
Bake the potatoes for 40 to 45 minutes, turning after 20 minutes. Bake until lightly browned, crisp outside and tender inside. Sprinkle with sea salt.

Boxty (potato cakes)
Ingredients
1 cup raw, grated potatoes
1 cup leftover mashed potatoes
1 large onion chopped finely
approximately 1 cup whole grain flour
2 tsp baking powder
salt & pepper
pinch of ground nutmeg
2 eggs or egg substitutes
approximately 1/4 cup milk or soy milk
Instructions
Drain the grated potatoes, removing as much of the liquid as possible. Mix the raw potatoes with the mashed potatoes. Add the onions, eggs (or substitutes), salt, pepper and nutmeg. Add the flour and baking powder. Mix all ingredients together and add enough milk to make a batter.
Drop by tablespoons onto a hot oiled frying pan and cook over moderate heat until browned (about 4 minutes per side). Serve hot. Apple Sauce goes well with boxty.

Irish Colcannon

6 potatoes, peeled and sliced
1 small head cabbage, chopped
1 cup milk or soymilk
1 onion, sliced
salt and pepper to taste
2 tbsp butter or non-hydrogenated margarine

Layer a large pot with potatoes, onion and cabbage. Cover with water and bring to a boil. Simmer until all the veggies are soft (aprox. 15 – 20 mins). Mash the mixture with the milk and salt and pepper to taste. Add the butter and stir to combine until the butter is melted. Serve hot.
